Affordable Egg Substitutes

With the cost of eggs rising and their availability questionable, many people are starting to turn to egg substitutes, not only for baking but also for regular consumption. While eggs are such a healthy source of protein and other nutrients, it might be time to consider incorporating some substitutions. You just might enjoy them enough to still use even when egg prices settle down in the future.
The great thing about most of these items is that they are usually extremely inexpensive. They can also be used in a variety of ways beyond egg substitutions. And they are also healthy and natural alternatives. Vegans rely on plant-based ingredients in lieu of egg products, so it’s pretty easy to research and discover recipes using such items.
Here’s a starter list of items you can use to replace eggs in baking and food preparation:
1) Aquafaba: Aquafaba is the liquid found in canned chickpeas, and it’s a staple of vegan chefs for recreating egg whites. Three tablespoons of this liquid is a perfect equivalent to one egg, and given its consistency, it’s a great sub for baking meringues, waffles, cakes, or anything that you want to have a fluffy, airy texture.
2) Applesauce: This egg substitute has been used for a long time to mimic the moisture in baked goods that eggs usually achieve. It’s perfect for muffins, quick breads, and crumb cakes. You can use about ¼ cup to replace one egg. Opt for unsweetened to be sure you’re not adding too much sugar to your recipe.
3) Flax Seed Meal: Mixing a little water with ground flaxseed is an amazing substitute for eggs because it works great as a binder, such as when you’re making meatloaf or croquettes. Vegetarians utilize this option often to create plant-based “fake” ground meat products. Plus, it’s super healthy and loaded with fiber. One tablespoon of ground flax seed mixed with about three tablespoons of water would sub for one egg.
4) Mashed Banana: Adding mashed banana to your baked goods will add moisture, a bit of sweetness, and also help bind things together. It’s perfect for your bread and cake recipes. Although keep in mind it will impart some banana flavor as well. ¼ of cup will mimic the serving of one egg.
5) Liquid Egg Substitutes: Liquid egg products that come in a carton can either be made with actual egg whites, or there are also vegan plant-based options as well. While these products might be a little more pricey than the other egg substitutions, given the price of regular eggs right now they just might become a better option for you. You can use them for anything you would normally use eggs for, but they are especially good in savory dishes like frittatas, omelets, or a breakfast casserole.
Like with any ingredient, these take a bit of experimentation, but with some practice, they just might become a part of your regular diet!
