Pina Colada Cupcakes

You are in for a real treat this Cinco De Mayo if you make these scrumptious festive cupcakes for your Wee ones or guests if you are throwing a Mexican bash. This recipe starts with a cake mix so even the home-baker can whip these up in a flash. Just add a few more ingredients and you have a moist pineapple rum cupcake. Top it with my very own coconut rum buttercream and shredded coconut. Voila! Now pour yourself a Pina Colada and get baking!

St. Patricks Day Greenies

Surprise your little Leprechauns this St. Patrick's Day with Shamrock treats. I call these "greenies" because they are actually blonde brownies that are dyed green and decorated with chocolate frosting straight from a can. What are blond brownies? They are moist and rich like their traditional chocolate cousins but, their main flavor component is brown sugar. Since they are thick and dense like a bar they are perfect for using cookie cutters.
